Little red monster....

Today Robbie and I took Jake to see Elmo! I never watched Sesame Street as a kid - I really didn't know all those furry things were monsters LOLOL! I know now! It was a very neat show! A lot of music, dancing, and lights. Jake was in AWE! LOVED IT!
We laugh at him so much b/c he is so serious... even when he is happy, he has the most serious look on his face, he is trying to grasp it all and soak up everything going on. He was this way for half the show... after intermission he started dancing, laughing, clapping, and singing. Anytime Elmo left the stage, he would hold his hands up and say "Elmooo??" I loved it. I loved seeing all the kids squeal with joy when Elmo came on stage, how stinkin' cute!






After the show was over, we went down to Varstiy to grab some lunch, took some clothes to the resale shop and picked up some money I made there, and stopped in Tip-Top's to use my Christmas gift card... yes I said Christmas.... I never get a chance to get on that side of town! ;) Now we are at Nana's house and Jake is napping... so I am killing time waiting on Heather to get here. We are going to get out and enjoy some girl time and this awesome weather! :) Happy Tuesday!!!

So much fun......

It's only Monday... feels like the middle of the week already! Josh is working A LOT this week - so it's just me and Jake... having lots of fun.... but missing daddy. We have a lot planned to do...and the weather is awesome!

So last Friday I kept Madley.. our little sweet cousin and one of Jake's best buds... they had a blast together. I laughed all day because they were running and laughing and playing so hard, pretty dang cute. They get along so well and loooooove each other, they kiss often, I will have to explain later that they are cousins haha.

Saturday I met Sarah and Ruby in VB - we had the kids pictures made with little bunnies... it was adorable. Jake loved the bunnies but was real quick to throw them down like a stuffed animal or something, that boy is wild! ha! He also threw down an egg and broke it :/ Ruby just wanted to eat the eggs... lol! Afterwards we headed over to Smokehouse to grab some lunch... fun times! I love time with Sarah and Ruby... sooo wish they lived down here...

Sunday was super fun... Kikki and PoPo took a jeep ride out to the house. They brought me some strawberry cake (I mean.. I celebrate my birthday all month ha!). We took the jeep up the road and back down to the creek... played in the creek... up to the lake to check out all the fish... back to the creek haha... Jake was just beaming with joy. He loves to be outside doing anything... but esp riding in the JEEP. He kept saying it over and over "jeep, jeep" love that little stinker!

Back to this week - today Jake and I played at home. The normal... then we headed to Payton's ballgame. Jake loved it. He screamed.. and clapped (sometimes for the other team ha) rolled around on the ground... ya know... acted like a total boy. Then it was dinner time with the fam... I think Jake ate more than me! He is going thru a growing spurt or something.

Tomorrow we are picking up Nana and heading to see ELMO! OMG! Jake is going to be in Heaven! The kid loves Elmo so so so much. I can not wait to see his face light up when he sees Elmo - LIVE! HA!

Wednesday we have plans to meet up with Kikki and do some fishing - pumped about that. We are making up for lost time from last week from all the yucky rain. Back to work Thur and Fri. Can't believe March is almost gone! I'm so ready for April though - lots of fun things going on!

Spicy Chicken Lasagna Roll-Ups

So on this rainy yucky day... I decided to cook.. I know... crazy hu!? I even got creative and took pictures so I could blog about it if it turned out good! Some of my friends do this and I LOVE it because I love looking at the pictures and seeing how they did it. Seeing how I am not crafty in the kitchen, I need all the help, pictures, recipes I can get haha! So here ya go! I loved it! 

Ingredients:
1 jar of 24 oz spaghetti sauce
1 tsp. Italian seasoning
1 tsp. crushed red pepper
3 cups shredded cooked chicken
2 cups shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
2 eggs, beaten
12 rinsed cooked lasagna noodles
Heat oven to 375


I started out with cooking the noodles and chicken...


Mix the first 3 ingredients ....

then you will need the cheese...

combine 1/2 cup with chicken (I added all the chicken at once.. just do it how ya want), 1 cup mozzarella, Parmesan and eggs. Spread 1/4 cup onto each noodle; roll up.

Pour 1/2 cup of the remaining sauce into 13x9 inch baking dish; top with lasagna rolls, seam sides down. Cover with remaining sauce and mozzarella 

Bake 25 minutes or until heated through.

YUMMMYMMMY! I served with salad... would have done garlic bread but got a little lazy.. ha!

Birthday Week

Recap from last week - I worked Monday and Tuesday. Wednesday was my birthday, Thursday was Jake's 18 month bday, and Friday was a day at home. It was a beautiful week and so much fun! On my birthday Jake and I were up early, had breakfast, and were at the creek by 8:30 am. We came in for lunch, Jake had a nap, and I cleaned up the house a little. I was in the middle of sweeping the floor and looked out the window and seen Josh's truck slowly coming down the driveway... then I seen 4-5 balloons flying out the window.. LOL! He is so sweet and so funny. He surprised me and took off at noon, went like 10 diff places picking up lots of goodies and brought them home to me. I was sooooo excited to spend the rest of the day with my boys. We ate Papa's pizza, Sweet Boutique cupcakes... played outside, rode the 4wheeler, listened for turkeys, and fished. It was pretty much the best birthday I've had in a long time. Jake had a blast too. He was wore plum out by that night. He smelled like a fish (b/c he had been playing with the minnows the whole time) and looked like a little mud ball, haha!

On to Jake - can't believe he is 18 months old. 1 1/2 years old! WHAT? When did this happen?  The boy is non-stop, full of energy, doesn't walk... he RUNS everywhere he goes. He is talking a lot. Repeating a lot (eeek) haha. He's sooo smart, so sweet, so stubborn, and boy o' boy does he have a temper. Josh and I knew he would. :) He can tell me what he wants pretty much... either by pointing or coming to get me to show me something. He can say lots and lots of words. We've worked on ABC's the most... I can point out any letter and he can tell me what it is. (almost any letter) "W" is my favorite to hear him say, it's hilarious. Next we will work on #'s and colors. haha. He doesn't tell me what animals are called but he tells me what they all SAY lol...poor Lola, Jake chases her constantly but she loves him just as much! He is all boy, loves trucks, dozers, tractors, 4 wheelers, outside, dirt, rocks, sticks, animals, other kids, etc. He is a lot of fun right now. Still teething - I have no idea what teeth he has b/c it's the biggest fight ever to look in his mouth. ha! Man, he is strong willed. Which is good... but bad for ME right now lol! His eating is probably the biggest thing that wears me out. He is real picky and doesn't eat much right now. Things he used to love he spits out now. He does like spaghetti, fried chicken with ketchup and fries. ha! He loves some fried crappie too. Loves any fruit and any snack.. (yogurt, goldfish, fruit snacks, LOVES sweets like his momma). Not sure how much he weighs.. but its close to 30 lbs. He is real stocky, like a little muscle man, so cute! LOOOOVE my sweet, little hot headed boy! :)

Over the weekend we worked in the yard all day Saturday. Mowed the grass before the flood came, picked up tons of rocks, trimmed some trees, ugh we did a lot. Well Josh did a lot, me and Jake helped some ;) Sunday was my birthday dinner at my momma's. We had burgers, baked beans, fries, and lots of delicious strawberry desserts. WOW did I eat like a champ! Ha! I loved every bit of it. Most of my mom's family was there and Sarah and Ruby came by. Love my family so so so much.

So last night was scary. I usually never worry too much about storms. Idk why I am like that, but last night was the first time I have been scared to death. Josh and I really weren't paying attention to what was going on.... we were in the kitchen talking and laughing and joking around. My mom called Josh's phone and told him there was a tornado heading toward Chester... to take cover. Josh ran through the house getting flash lights, storm radio, etc. In the midst of this panic, I could hear that quiet sound and then a loud whistle, weird sound... I freaked... Josh ran in Jake's room to grab him and the next thing I know power was out...  I was so scared. It didn't last long... but was definitely scary. No damage so far that I see.... lots of things that were once on the back porch are out in the yard. Bo's doghouse is in pieces in the yard, not sure where Bo is?! I see a tree in the field that looks like it was hit. :/ I bet our creek is flooded by the end of the day, hope Josh can make it back in! Thank you Lord for keeping us safe and no major damage though!

Rainy Days...

Looks like rain is in the forecast until next week. Boo! However; next week does look good! Nice and WARM! Stinks with all this rain because we just had a lot of dozer work done. Josh and I had to spread hay over the yard to make sure ALL of the dirt doesn’t wash away :/ let’s hope not anyway.

We took out two big trees in the front yard and leveled the ground somewhat. Now, when you drive up you can actually see the house… not just half of the house. Ha! I am more excited about working on the garage so we can park in there and getting to actually do some landscaping in our front yard…which will be more like next year probably. The garage is our main goal this year though. New goals every year! We are getting there.

Next week is my birthday – I always do a bonfire/4 wheeler ride… but this year I am thinking I want to go out of town! Just me and Josh… but it may be more like the end of the month. Heck, we may not do anything. Not feeling it this year. Josh is planning a big bash for his birthday though. Not sure what all he has going on haha. His birthday falls on Easter this year. I’m excited for April… lots of fun things going on.

On a sad note – still praying for a dear friend to many – Bert Wright aka Mr. Downtown. What an awesome guy and what a legend to Fort Smith. I mean, heck, he made the news! ;) I wish there was a cure for his disease… he is going to be soooo missed… I don’t know who I will look for when I walk into the Rib Room and Papa’s! Who will I hug and catch up with?! He is so so loved by many and that makes me smile.
